Ingredients
- 4 slices of sourdough bread
- 1 cup kimchi, drained and chopped
- 4 slices of sharp cheddar cheese
- 4 slices of mozzarella cheese
- 2 tablespoons butter, softened
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon mayonnaise
- 1 teaspoon sesame oil
Instructions
- Step 1: In a small bowl, mix together the gochujang, mayonnaise, and sesame oil to create the spicy mayo sauce.
- Step 2: Spread one side of each slice of sourdough bread with the softened butter.
- Step 3: Flip the slices over and spread the spicy mayo sauce on the unbuttered side of each slice.
- Step 4: Place a slice of cheddar cheese on the mayo side of two slices of bread.
- Step 5: Evenly distribute the chopped kimchi on top of the cheddar cheese.
- Step 6: Add a slice of mozzarella cheese over the kimchi on each slice.
- Step 7: Top with the remaining bread slices, mayo side down, to form two sandwiches.
- Step 8: Heat a nonstick skillet over medium heat and place the sandwiches in the skillet.
- Step 9: Cook each side for 3-4 minutes, or until the bread is golden brown and the cheese is melted.
- Step 10: Remove from the skillet, let rest for a minute, then slice and serve immediately.
