Ingredients
- 1 tablespoon olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 lemon, zest and juice
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- Step 1: Heat the olive oil in a large skillet over medium-high heat.
- Step 2: Season the chicken breasts with salt, pepper, garlic powder, and dried oregano.
- Step 3: Add the chicken to the skillet and cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- Step 4: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.
- Step 5: Stir in the orzo and cook for 1-2 minutes until lightly toasted.
- Step 6: Pour in the chicken broth and heavy cream, and bring to a simmer.
- Step 7: Reduce the heat to low and cook, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed, about 10-12 minutes.
- Step 8: Add the lemon zest, lemon juice, and grated Parmesan cheese to the skillet, stirring to combine.
- Step 9: Return the chicken breasts to the skillet, nestling them in the orzo, and cook for an additional 2-3 minutes until heated through.
- Step 10: Garnish with chopped fresh parsley before serving.
