This Lemon Chicken Pasta combines zesty lemon and creamy sauce for a delightful and refreshing meal.
Ingredients
- 8 ounces linguine pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 lemon, zested and juiced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Step 1: Cook the linguine pasta according to package instructions until al dente, then drain and set aside.
- Step 2: Heat olive oil in a large skillet over medium-high heat and add the chicken pieces.
- Step 3: Season the chicken with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes.
- Step 4: Add minced garlic and red pepper flakes to the skillet, cooking until fragrant, about 1 minute.
- Step 5: Stir in the lemon zest and juice, then pour in the chicken broth and bring to a simmer.
- Step 6: Reduce the heat to low and stir in the heavy cream and Parmesan cheese until the sauce is smooth and slightly thickened.
- Step 7: Add the cooked linguine to the skillet, tossing to coat evenly with the sauce.
- Step 8: Garnish with chopped parsley before serving.
