Lemon Garlic Chicken Thighs

Ingredients

  • 4 bone-in, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken broth
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat.
  3. Step 3: Season chicken thighs with salt and pepper.
  4. Step 4: Place the chicken thighs in the skillet and sear until golden brown, about 5 minutes.
  5. Step 5: Flip the chicken and cook for another 2 minutes, then remove from the skillet and set aside.
  6. Step 6: In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  7. Step 7: Add lemon slices, oregano, thyme, and low-sodium chicken broth to the skillet, stirring to combine.
  8. Step 8: Return the chicken thighs to the skillet and spoon some of the sauce over the chicken.
  9. Step 9: Transfer the skillet to the oven and bake for 25-30 minutes, until the chicken is cooked through.
  10. Step 10: Remove from the oven, add 1 tablespoon of extra-virgin olive oil to the skillet, and stir to incorporate into the sauce. Sprinkle with fresh parsley before serving.
