Ingredients
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup water
- 1 lemon, zested and juiced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Step 1: Heat olive oil in a large pot over medium heat.
- Step 2: Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.
- Step 3: Remove the chicken from the pot and set aside.
- Step 4: In the same pot, add the diced onion and minced garlic, sautéing until the onion is translucent.
- Step 5: Stir in the orzo pasta, cooking for 2-3 minutes until slightly toasted.
- Step 6: Pour in the chicken broth, water, lemon zest, lemon juice, oregano, thyme, salt, and pepper.
- Step 7: Return the chicken to the pot and bring the mixture to a simmer.
- Step 8: Cover the pot and cook for 10-12 minutes until the orzo is tender and has absorbed most of the liquid.
- Step 9: Stir in the baby spinach and cook until wilted.
- Step 10: Remove from heat and sprinkle with Parmesan cheese and fresh parsley before serving.
