A hearty and satisfying loaded baked potato topped with cheddar cheese, crispy bacon, and fresh green onions.
Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 2 tablespoons unsalted butter
- 1/4 cup chopped green onions
- 1/4 cup milk
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Scrub the potatoes under running water and pat dry with a towel.
- Step 3: Rub the potatoes with olive oil, then sprinkle them with salt and black pepper.
- Step 4: Place the potatoes directly on the oven rack and bake for 50 to 60 minutes, until tender.
- Step 5: Remove the potatoes from the oven and let them cool for a few minutes.
- Step 6: Slice each potato lengthwise and scoop out the insides into a bowl, leaving a thin shell.
- Step 7: Mash the potato insides with butter, milk, and half of the cheddar cheese until creamy.
- Step 8: Fill the potato shells with the mashed mixture and top with remaining cheese and bacon.
- Step 9: Return to the oven for 10 minutes until the cheese is melted and bubbly.
- Step 10: Serve hot, topped with sour cream and green onions.
