Loaded Potato Soup

Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika (optional)
  • 1/2 cup sour cream (optional, for serving)

Instructions

  1. Step 1: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Step 2: Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Step 3: Stir in the diced potatoes, and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
  4. Step 4: Once the potatoes are tender, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth.
  5. Step 5: Return the blended soup to the pot over low heat. Stir in the heavy cream, shredded cheddar cheese, and paprika (if using). Mix until the cheese is melted and the soup is heated through.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve the soup hot, topped with crumbled bacon, sliced green onions, and a dollop of sour cream if desired.
