Ingredients
- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, cut into wedges
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon Sriracha sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Step 2: In a small bowl, mix together the maple syrup, olive oil, soy sauce, Sriracha, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
- Step 3: Place the chicken breasts in a large bowl and pour half of the maple mixture over them, ensuring they are well coated.
- Step 4: Arrange the chicken on one side of the prepared baking sheet.
- Step 5: In the same bowl, add the sweet potato wedges and drizzle with the remaining maple mixture, tossing to coat evenly.
- Step 6: Spread the sweet potato wedges on the other side of the baking sheet, ensuring they are in a single layer.
- Step 7: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sweet potato wedges are tender and slightly crispy.
- Step 8: Remove from the oven and let rest for a few minutes.
- Step 9: Garnish with chopped fresh parsley before serving.
