This hearty and flavorful Mexican Casserole combines layers of seasoned beef, beans, and cheese for a satisfying meal perfect for any night of the week.

Mexican Casserole

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 8 small corn tortillas, cut into strips
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet over medium heat, add the olive oil and sauté the onion and garlic until translucent.
  3. Step 3: Add the ground beef, cumin, and chili powder to the skillet, cooking until the beef is browned and fully cooked. Drain any excess fat.
  4. Step 4: Stir in the black beans, corn, and diced tomatoes with green chilies. Season with salt and pepper, and simmer for 5 minutes.
  5. Step 5: In a 9x13-inch baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
  6. Step 6: Cover the casserole with foil and bake in the preheated oven for 20 minutes.
  7. Step 7: Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  8. Step 8: Let the casserole cool for a few minutes before topping with fresh cilantro, if using, and serving.
