Miso Maple Vegetable Bowl

Ingredients

  • 2 tablespoons white miso paste
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 medium butternut squash, peeled and cubed
  • 2 large carrots, sliced
  • 1 red onion, cut into wedges
  • 1 cup Brussels sprouts, halved
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: In a small bowl, whisk together the miso paste, maple syrup, olive oil, soy sauce, and rice vinegar until smooth.
  3. Step 3: In a large mixing bowl, combine the butternut squash, carrots, red onion, and Brussels sprouts.
  4. Step 4: Pour the miso maple mixture over the vegetables and toss well to coat evenly.
  5. Step 5: Spread the coated vegetables in a single layer on a large baking sheet.
  6. Step 6: Sprinkle the garlic powder and black pepper over the vegetables.
  7. Step 7: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden brown.
  8. Step 8: While the vegetables are roasting, prepare 1 cup of quinoa according to the package instructions.
  9. Step 9: Once the vegetables are done, remove them from the oven and transfer them to a serving bowl.
  10. Step 10: Add the cooked quinoa to the bowl and toss everything together gently.
  11. Step 11: Garnish with sliced green onions and sesame seeds before serving.
