Ingredients
- 2 tablespoons white miso paste
- 3 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 medium butternut squash, peeled and cubed
- 2 large carrots, sliced
- 1 red onion, cut into wedges
- 1 cup Brussels sprouts, halved
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a small bowl, whisk together the miso paste, maple syrup, olive oil, soy sauce, and rice vinegar until smooth.
- Step 3: In a large mixing bowl, combine the butternut squash, carrots, red onion, and Brussels sprouts.
- Step 4: Pour the miso maple mixture over the vegetables and toss well to coat evenly.
- Step 5: Spread the coated vegetables in a single layer on a large baking sheet.
- Step 6: Sprinkle the garlic powder and black pepper over the vegetables.
- Step 7: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden brown.
- Step 8: While the vegetables are roasting, prepare 1 cup of quinoa according to the package instructions.
- Step 9: Once the vegetables are done, remove them from the oven and transfer them to a serving bowl.
- Step 10: Add the cooked quinoa to the bowl and toss everything together gently.
- Step 11: Garnish with sliced green onions and sesame seeds before serving.
