Ingredients
- 2 tablespoons sesame oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 200g shiitake mushrooms, sliced
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 2 tablespoons white miso paste
- 1 tablespoon rice vinegar
- 200g ramen noodles
- 100g baby spinach
- 2 green onions, sliced
- 2 boiled eggs, halved
- 1 tablespoon sesame seeds
Instructions
- Step 1: Heat sesame oil in a large pot over medium heat.
- Step 2: Add the onion and sauté until translucent.
- Step 3: Stir in the garlic and ginger, cooking until fragrant.
- Step 4: Add the shiitake mushrooms and cook until they are tender.
- Step 5: Pour in the vegetable broth and soy sauce, and bring to a simmer.
- Step 6: In a small bowl, whisk the miso paste with a few tablespoons of the hot broth until smooth, then stir it back into the pot.
- Step 7: Add the rice vinegar and continue to simmer for another 5 minutes.
- Step 8: Meanwhile, cook the ramen noodles according to the package instructions and drain.
- Step 9: Add the baby spinach to the broth and cook until wilted.
- Step 10: Divide the cooked noodles between bowls, ladle the broth and vegetables over the noodles.
- Step 11: Top with sliced green onions, halved boiled eggs, and a sprinkle of sesame seeds before serving.
