Ingredients
- 2 tablespoons vegetable oil
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 3 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon chili paste or sriracha
- 4 cups vegetable broth
- 1 cup water
- 2 cups sliced shiitake mushrooms
- 1 cup chopped kale
- 1 cup cubed butternut squash
- 2 packs fresh or dried ramen noodles
- 2 green onions, sliced
- 2 tablespoons sesame seeds, toasted
- 1 soft-boiled egg per serving (optional)
Instructions
- Step 1: Heat the vegetable oil in a large pot over medium heat.
- Step 2: Add the sliced onion and sauté until translucent, then add the garlic and ginger, cooking for another minute until fragrant.
- Step 3: Stir in the miso paste, soy sauce, and chili paste until well combined and fragrant.
- Step 4: Pour in the vegetable broth and water, bringing the mixture to a simmer.
- Step 5: Add the shiitake mushrooms, kale, and butternut squash to the pot, cooking until the vegetables are tender, about 10 minutes.
- Step 6: Meanwhile, cook the ramen noodles according to the package instructions, then drain and set aside.
- Step 7: Once the vegetables are cooked, taste the broth and adjust seasoning with more soy sauce or chili paste if needed.
- Step 8: Divide the cooked noodles into serving bowls and ladle the hot broth and vegetables over the top.
- Step 9: Garnish each bowl with sliced green onions, toasted sesame seeds, and a soft-boiled egg if using.
- Step 10: Serve hot and enjoy your spicy miso ramen with winter vegetables.
