Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 pound cremini mushrooms, sliced
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 cup vegetable broth
- 1 cup coconut milk
- 2 tablespoons nutritional yeast
- Salt and pepper to taste
- 1 medium head of cauliflower, grated into rice
- 2 tablespoons fresh parsley, chopped
Instructions
- Step 1: Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
- Step 2: Stir in the minced garlic and cook for another minute until fragrant.
- Step 3: Add the sliced mushrooms to the skillet and cook until they release their moisture and begin to brown.
- Step 4: Stir in the soy sauce, smoked paprika, and dried thyme, mixing well to coat the mushrooms.
- Step 5: Pour in the vegetable broth and bring the mixture to a simmer. Allow it to cook for about 5 minutes to reduce slightly.
- Step 6: Add the coconut milk and nutritional yeast, stirring to combine. Let the sauce continue to simmer until it thickens.
- Step 7: Season the sauce with salt and pepper to taste. Keep warm over low heat.
- Step 8: In a separate pan, heat a little olive oil and add the grated cauliflower. Cook for about 5 minutes, stirring occasionally, until tender.
- Step 9: Serve the mushroom stroganoff over the cauliflower rice.
- Step 10: Garnish with chopped fresh parsley before serving.
