Mushroom Stroganoff

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound cremini mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 cup vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste
  • 1 medium head of cauliflower, grated into rice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Step 1: Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
  2. Step 2: Stir in the minced garlic and cook for another minute until fragrant.
  3. Step 3: Add the sliced mushrooms to the skillet and cook until they release their moisture and begin to brown.
  4. Step 4: Stir in the soy sauce, smoked paprika, and dried thyme, mixing well to coat the mushrooms.
  5. Step 5: Pour in the vegetable broth and bring the mixture to a simmer. Allow it to cook for about 5 minutes to reduce slightly.
  6. Step 6: Add the coconut milk and nutritional yeast, stirring to combine. Let the sauce continue to simmer until it thickens.
  7. Step 7: Season the sauce with salt and pepper to taste. Keep warm over low heat.
  8. Step 8: In a separate pan, heat a little olive oil and add the grated cauliflower. Cook for about 5 minutes, stirring occasionally, until tender.
  9. Step 9: Serve the mushroom stroganoff over the cauliflower rice.
  10. Step 10: Garnish with chopped fresh parsley before serving.
