New England Clam Chowder

Ingredients

  • 4 slices of bacon, diced
  • 1 medium onion, chopped
  • 2 ribs of celery, chopped
  • 2 medium potatoes, peeled and diced
  • 2 cups of clam juice
  • 1 cup of heavy cream
  • 2 cans (6.5 ounces each) of chopped clams, drained
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Step 1: In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Step 2: Add the chopped onion and celery to the pot and sauté in the bacon drippings until the onion is translucent.
  3. Step 3: Stir in the diced potatoes and cook for another 5 minutes.
  4. Step 4: Pour in the clam juice and bring to a simmer. Cover and cook until the potatoes are tender, about 15 minutes.
  5. Step 5: Reduce the heat to low and stir in the heavy cream, drained clams, and dried thyme. Cook for an additional 5 minutes, do not boil.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve hot, garnished with the cooked bacon and fresh parsley.
