Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons harissa paste
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup green olives, pitted and halved
- 1 lemon, sliced
- 1/4 cup fresh parsley, chopped
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a bowl, mix the harissa paste, olive oil, ground cumin, smoked paprika, salt, and pepper.
- Step 3: Coat the chicken thighs with the harissa mixture, ensuring they are evenly covered.
- Step 4: Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs for 3-4 minutes on each side until browned.
- Step 5: Remove the chicken from the skillet and set aside.
- Step 6: In the same skillet, add the orzo and stir for about 1 minute to lightly toast.
- Step 7: Pour in the chicken broth and add the green olives, stirring to combine.
- Step 8: Place the chicken thighs back into the skillet, nestling them into the orzo and olives.
- Step 9: Top with lemon slices and transfer the skillet to the preheated oven.
- Step 10: Bake for 20-25 minutes, or until the chicken is cooked through and the orzo is tender.
- Step 11: Garnish with fresh parsley before serving.
