This one-pan lemon herb chicken is a delightful and easy-to-make dish, bursting with fresh flavors and perfect for a quick weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 1 tablespoon lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Instructions
- Step 1: Season the chicken breasts with salt and black pepper on both sides.
- Step 2: Heat olive oil in a large skillet over medium-high heat.
- Step 3: Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Step 4: In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Step 5: Stir in lemon slices, lemon juice, oregano, thyme, and paprika, cooking for another minute.
- Step 6: Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the pan.
- Step 7: Return the chicken to the skillet and spoon some of the sauce over the top. Add the butter to the skillet and let it melt into the sauce.
- Step 8: Simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Step 9: Garnish with chopped parsley before serving.
