A vibrant and delicious classic Vegetarian Pad Thai, perfect for a quick and satisfying meal.
Ingredients
- 8 ounces rice noodles
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 cup firm tofu, diced
- 2 large eggs, lightly beaten
- 1 cup bean sprouts
- 1 red bell pepper, thinly sliced
- 1/4 cup roasted peanuts, chopped
- 3 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 tablespoon tamarind paste
- 1 teaspoon chili paste or to taste
Instructions
- Step 1: Soak the rice noodles in warm water for 20 minutes, then drain and set aside.
- Step 2: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Step 3: Add the garlic and tofu, cooking until the tofu is golden brown, about 5 minutes.
- Step 4: Push the tofu to one side of the skillet and add the remaining oil, then pour in the eggs and scramble until just set.
- Step 5: Add the drained noodles, bean sprouts, and bell pepper to the skillet, stirring everything together.
- Step 6: In a small bowl, mix the soy sauce, lime juice, brown sugar, tamarind paste, and chili paste, then pour over the noodle mixture.
- Step 7: Toss everything together until the noodles are well coated and heated through.
- Step 8: Remove from heat and top with peanuts, green onions, and cilantro before serving.
