A juicy, flavorful rotisserie chicken roasted to perfection with a crispy, seasoned skin.
Ingredients
- 1 whole chicken (3-4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 lemon, halved
- 1 small onion, quartered
Instructions
- Step 1: Preheat your oven to 375°F.
- Step 2: Rinse the chicken inside and out under cold water, then pat dry with paper towels.
- Step 3: Rub the chicken with olive oil, ensuring it's coated evenly.
- Step 4: In a small bowl, mix together the salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.
- Step 5: Season the chicken inside and out with the spice mixture, making sure to rub it under the skin where possible.
- Step 6: Squeeze the lemon halves over the chicken and place the squeezed halves inside the cavity along with the onion quarters.
- Step 7: Truss the chicken legs together with kitchen twine to ensure even cooking.
- Step 8: Place the chicken on a roasting rack in a roasting pan, breast side up.
- Step 9: Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the juices run clear.
- Step 10: Let the chicken rest for 10 minutes before carving and serving.
