A comforting and hearty dish, Shepherd's Pie is a savory combination of seasoned lamb and vegetables topped with creamy mashed potatoes and melted cheese.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground lamb
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup frozen peas and carrots
  • 4 cups mashed potatoes
  • 1/2 cup grated cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Heat olive oil in a large skillet over medium heat, add the onion and garlic, and sauté until the onion is translucent.
  3. Step 3: Add the ground lamb to the skillet, cooking until browned and crumbled, then drain any excess fat.
  4. Step 4: Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper, bringing the mixture to a simmer.
  5. Step 5: Mix in the frozen peas and carrots, then transfer the meat mixture to a baking dish.
  6. Step 6: Spread the mashed potatoes over the meat mixture evenly, smoothing the top with a spatula.
  7. Step 7: Sprinkle the grated cheddar cheese over the mashed potatoes.
  8. Step 8: Bake in the preheated oven for 25 minutes, or until the cheese is melted and lightly browned.
  9. Step 9: Allow the pie to cool for a few minutes before serving.
