A savory Southern classic, Shrimp and Grits combines creamy cheddar-infused grits with succulent shrimp and crispy bacon for a comforting and flavorful dish.
Ingredients
- 1 cup stone-ground grits
- 4 cups water
- 1 teaspoon salt
- 2 tablespoons unsalted butter
- 1 cup shredded sharp cheddar cheese
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 cup diced bacon
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Step 1: Bring 4 cups of water to a boil in a medium saucepan, add 1 teaspoon of salt, then slowly whisk in the grits.
- Step 2: Reduce the heat to low and simmer, stirring frequently, until the grits are thick and creamy, about 20 minutes.
- Step 3: Remove the grits from the heat and stir in the butter and cheddar cheese until melted and smooth.
- Step 4: In a large skillet, cook the bacon over medium heat until crispy, then remove and set aside, leaving about 1 tablespoon of bacon fat in the pan.
- Step 5: Add olive oil to the skillet, then sauté the shrimp over medium-high heat until pink and opaque, about 3-4 minutes per side.
- Step 6: Add the green onions and garlic to the shrimp, cooking until fragrant, about 1 minute.
- Step 7: Stir in the lemon juice and cayenne pepper, season with salt and pepper, and return the bacon to the skillet, mixing everything well.
- Step 8: Serve the shrimp mixture over the prepared grits, garnishing with additional green onions if desired.
