These vibrant shrimp kabobs are grilled to perfection with a savory marinade, making them a delicious and easy meal for any occasion.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 1 zucchini, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- Step 1: In a large bowl, combine olive oil, lemon juice, garlic, paprika, salt, and black pepper.
- Step 2: Add shrimp, bell peppers, red onion, and zucchini to the bowl and toss to coat evenly with the marinade.
- Step 3: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Step 4: Preheat grill to medium-high heat.
- Step 5: Thread shrimp and vegetables onto skewers, alternating between shrimp, bell pepper, onion, and zucchini.
- Step 6: Place skewers on the grill and cook for 2-3 minutes on each side, or until shrimp are pink and opaque and vegetables are tender.
- Step 7: Remove from grill and sprinkle with fresh parsley before serving.
- Step 8: Serve immediately, either directly on the skewers or remove shrimp and vegetables to a serving platter.
