Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 can (14 ounces) diced tomatoes
- 2 tablespoons capers, rinsed and drained
- 1/2 cup black olives, pitted and sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon black pepper
- 8 ounces spaghetti or pasta of choice
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Step 1: 1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Step 2: 2. In a large skillet, heat the olive oil over medium heat.
- Step 3: 3. Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Step 4: 4. Add the diced tomatoes, capers, black olives, oregano, salt, and black pepper to the skillet. Stir to combine and bring to a simmer.
- Step 5: 5. Cook the sauce for about 5-7 minutes, allowing the flavors to meld together.
- Step 6: 6. Add the shrimp to the skillet, cooking for about 3-5 minutes, or until the shrimp are pink and cooked through.
- Step 7: 7. Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce and shrimp.
- Step 8: 8. Remove from heat and garnish with chopped parsley.
- Step 9: 9. Serve hot, with grated Parmesan cheese if desired.
