Shrimp Puttanesca

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons capers, rinsed and drained
  • 1/2 cup black olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper
  • 8 ounces spaghetti or pasta of choice
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Step 1: 1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Step 2: 2. In a large skillet, heat the olive oil over medium heat.
  3. Step 3: 3. Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Step 4: 4. Add the diced tomatoes, capers, black olives, oregano, salt, and black pepper to the skillet. Stir to combine and bring to a simmer.
  5. Step 5: 5. Cook the sauce for about 5-7 minutes, allowing the flavors to meld together.
  6. Step 6: 6. Add the shrimp to the skillet, cooking for about 3-5 minutes, or until the shrimp are pink and cooked through.
  7. Step 7: 7. Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce and shrimp.
  8. Step 8: 8. Remove from heat and garnish with chopped parsley.
  9. Step 9: 9. Serve hot, with grated Parmesan cheese if desired.
