This classic Shrimp Scampi features succulent shrimp sautéed in a buttery garlic sauce, served over a bed of linguine for a quick and delicious meal.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine pasta
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup dry white wine
- 1 lemon, juiced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente, then drain and set aside.
- Step 2: In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Step 3: Add the minced garlic and red pepper flakes to the skillet and sauté for about 1 minute until fragrant.
- Step 4: Add the shrimp to the skillet, season with salt and pepper, and cook until they turn pink and opaque, about 2-3 minutes per side.
- Step 5: Pour in the white wine and lemon juice, then let it simmer for 2-3 minutes until the sauce slightly reduces.
- Step 6: Stir in the remaining 2 tablespoons of butter until melted and well combined.
- Step 7: Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce.
- Step 8: Sprinkle the chopped parsley and Parmesan cheese over the dish, tossing gently to combine.
- Step 9: Taste and adjust seasoning with more salt and pepper if needed before serving.
