Ingredients
- 1 medium head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup buffalo sauce
- 1 tablespoon melted butter
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup crumbled blue cheese
- 1/4 cup sliced green onions
- 1/4 cup chopped fresh cilantro
Instructions
- Step 1: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Step 2: In a large bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the cauliflower is evenly coated.
- Step 3: Spread the cauliflower in a single layer on the prepared baking sheet and roast for 20-25 minutes until golden and tender.
- Step 4: In a small bowl, mix together the buffalo sauce and melted butter.
- Step 5: Remove the cauliflower from the oven and use a fork or potato masher to gently smash the florets. Drizzle with the buffalo sauce mixture, ensuring all pieces are well coated.
- Step 6: Return to the oven for an additional 5-7 minutes to allow the sauce to bake onto the cauliflower.
- Step 7: Warm the corn tortillas in a dry skillet over medium heat or directly over a gas flame until pliable.
- Step 8: Assemble the tacos by placing a layer of shredded lettuce on each tortilla, followed by the buffalo cauliflower.
- Step 9: Top with crumbled blue cheese, sliced green onions, and chopped cilantro.
- Step 10: Serve immediately with extra buffalo sauce on the side if desired.
