Smoked Brisket

Ingredients

  • 1 whole beef brisket (about 10 pounds)
  • 1/4 cup kosher salt
  • 1/4 cup black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon cayenne pepper
  • 1/4 cup yellow mustard
  • Wood chips (hickory or oak recommended)

Instructions

  1. Step 1: Trim any excess fat from the brisket, leaving about 1/4 inch of fat on the surface.
  2. Step 2: In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, paprika, brown sugar, and cayenne pepper to make the dry rub.
  3. Step 3: Rub the brisket thoroughly with yellow mustard to help the dry rub adhere.
  4. Step 4: Apply the dry rub generously over the entire brisket, ensuring even coverage.
  5. Step 5: Preheat your smoker to 225°F and add wood chips according to the manufacturer's instructions.
  6. Step 6: Place the brisket in the smoker fat side up and smoke for about 6 hours, or until the internal temperature reaches 165°F.
  7. Step 7: Wrap the brisket tightly in butcher paper or aluminum foil and continue smoking until the internal temperature reaches 203°F, about another 4-6 hours.
  8. Step 8: Remove the brisket from the smoker and let it rest, wrapped, for at least 1 hour before slicing.
  9. Step 9: Slice the brisket against the grain and serve with your favorite barbecue sauce or sides.
