Spicy Gochujang Oatmeal with Savory Toppings

Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup kimchi, chopped
  • 2 green onions, sliced
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 1 tablespoon toasted sesame seeds
  • Salt to taste
  • Sliced avocado (optional)

Instructions

  1. Step 1: In a medium saucepan, combine the rolled oats and water, and bring to a boil over medium-high heat.
  2. Step 2: Reduce the heat to low and stir in the gochujang, soy sauce, and sesame oil. Cook, stirring frequently, until the oats are creamy and cooked through, about 5 minutes.
  3. Step 3: While the oats cook, heat the vegetable oil in a small skillet over medium heat. Crack the eggs into the skillet and fry until the whites are set and the yolks are still runny, about 3 to 4 minutes.
  4. Step 4: Once the oatmeal is cooked, remove it from the heat and stir in the chopped kimchi and half of the sliced green onions.
  5. Step 5: Season the oatmeal with salt to taste, then divide it between serving bowls.
  6. Step 6: Top each bowl with a fried egg, then garnish with the remaining green onions and toasted sesame seeds.
  7. Step 7: If desired, add slices of avocado on top for extra creaminess.
  8. Step 8: Serve immediately while hot, enjoying the spicy, savory flavors.
