Ingredients
- 1 cup rolled oats
- 2 cups water
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 cup kimchi, chopped
- 2 green onions, sliced
- 2 eggs
- 1 tablespoon vegetable oil
- 1 tablespoon toasted sesame seeds
- Salt to taste
- Sliced avocado (optional)
Instructions
- Step 1: In a medium saucepan, combine the rolled oats and water, and bring to a boil over medium-high heat.
- Step 2: Reduce the heat to low and stir in the gochujang, soy sauce, and sesame oil. Cook, stirring frequently, until the oats are creamy and cooked through, about 5 minutes.
- Step 3: While the oats cook, heat the vegetable oil in a small skillet over medium heat. Crack the eggs into the skillet and fry until the whites are set and the yolks are still runny, about 3 to 4 minutes.
- Step 4: Once the oatmeal is cooked, remove it from the heat and stir in the chopped kimchi and half of the sliced green onions.
- Step 5: Season the oatmeal with salt to taste, then divide it between serving bowls.
- Step 6: Top each bowl with a fried egg, then garnish with the remaining green onions and toasted sesame seeds.
- Step 7: If desired, add slices of avocado on top for extra creaminess.
- Step 8: Serve immediately while hot, enjoying the spicy, savory flavors.
