Ingredients
- 3 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 tablespoon maple syrup
- 1 tablespoon butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup coconut milk
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, black pepper, cayenne pepper, and maple syrup until well coated.
- Step 3: Spread the sweet potatoes in a single layer on a baking sheet and roast in the oven for 25-30 minutes, or until tender and caramelized.
- Step 4: In a large pot over medium heat, melt the butter and sauté the chopped onion until soft and translucent, about 5 minutes.
- Step 5: Add the minced garlic to the pot and cook for another minute until fragrant.
- Step 6: Add the roasted sweet potatoes to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
- Step 7: Use an immersion blender to puree the soup until smooth. Alternatively, let the soup cool slightly and blend in batches in a countertop blender.
- Step 8: Stir in the coconut milk and lime juice, and heat the soup gently over low heat. Adjust seasoning with more salt if needed.
- Step 9: Serve hot, garnished with fresh cilantro.
