Ingredients
- 2 cups cubed winter squash (such as butternut or acorn)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 package (16 oz) potato gnocchi
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 bunch kale, stems removed and leaves chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon nutmeg
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Toss the cubed squash with olive oil, salt, and pepper, then spread it on a baking sheet and roast for 20 minutes until tender.
- Step 3: While the squash is roasting, cook the gnocchi according to package instructions, then drain and set aside.
- Step 4: In a large skillet, melt the butter over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Step 5: Add the chopped kale to the skillet and cook until wilted, about 5 minutes.
- Step 6: Stir in the roasted squash, cooked gnocchi, heavy cream, Parmesan cheese, nutmeg, and red pepper flakes, if using.
- Step 7: Season the mixture with salt and pepper to taste and transfer it to a greased baking dish.
- Step 8: Sprinkle the mozzarella cheese evenly over the top of the gnocchi mixture.
- Step 9: Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Step 10: Let the dish cool slightly before serving.
