Juicy, spiced flank steak paired with sautéed peppers and onions make these steak fajitas a flavorful and satisfying meal.
Ingredients
- 1 1/2 pounds flank steak
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lime
- 8 flour tortillas
- 1/4 cup chopped fresh cilantro
- Sour cream, for serving (optional)
- Salsa, for serving (optional)
Instructions
- Step 1: In a small bowl, mix together the cumin, chili powder, smoked paprika, salt, and pepper.
- Step 2: Rub the spice mixture all over the flank steak, ensuring an even coating.
- Step 3: Heat olive oil in a large skillet over medium-high heat, then add the steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired level of doneness.
- Step 4: Remove the steak from the skillet and let it rest on a cutting board while you prepare the vegetables.
- Step 5: In the same skillet, add the onions and bell peppers, cooking until they are soft and slightly charred, about 5-7 minutes.
- Step 6: Add the minced garlic and cook for an additional minute until fragrant.
- Step 7: Slice the rested steak thinly against the grain, and squeeze lime juice over the slices.
- Step 8: Warm the flour tortillas in a dry skillet or microwave.
- Step 9: Serve the sliced steak and cooked vegetables on the warm tortillas, garnished with fresh cilantro, and offer sour cream and salsa on the side.
