This Steak Quesadilla is a deliciously simple dish packed with savory steak, melted cheese, and sautéed vegetables, perfect for a quick and satisfying meal.

Steak Quesadilla

Ingredients

  • 1 pound flank steak
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 2 tablespoons unsalted butter
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Step 1: Season the flank steak with salt, black pepper, garlic powder, and onion powder on both sides.
  2. Step 2: Heat olive oil in a large skillet over medium-high heat and cook the steak for about 5-6 minutes per side until desired doneness is reached.
  3. Step 3: Remove the steak from the skillet and let it rest for 5 minutes, then slice it thinly against the grain.
  4. Step 4: In the same skillet, add diced red onion and bell pepper, cooking until soft, about 3-4 minutes.
  5. Step 5: In another large skillet, melt 1/2 tablespoon of butter over medium heat and place one tortilla in the skillet.
  6. Step 6: On half of the tortilla, layer a portion of the sliced steak, sautéed vegetables, and a mix of cheddar and Monterey Jack cheeses.
  7. Step 7: Fold the tortilla over and cook for 2-3 minutes per side until the cheese is melted and the tortilla is golden brown.
  8. Step 8: Repeat with the remaining tortillas, adding butter to the skillet as needed.
  9. Step 9: Cut each quesadilla into wedges and serve with sour cream and salsa.
