Stuffed Bell Pepper Tacos

Ingredients

  • 4 large bell peppers, halved and seeds removed
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup cooked rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Sour cream for serving (optional)

Instructions

  1. Step 1: Preheat the air fryer to 360°F (182°C).
  2. Step 2: Heat olive oil in a skillet over medium heat and add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Step 3: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  4. Step 4: Stir in the cumin, chili powder, smoked paprika, salt, and pepper, then cook for another 2 minutes.
  5. Step 5: Add the cooked rice and black beans to the beef mixture, stirring until well combined.
  6. Step 6: Stuff each bell pepper half with the beef and rice mixture and top with shredded cheddar cheese.
  7. Step 7: Place the stuffed bell peppers in the air fryer basket, ensuring they are not overcrowded.
  8. Step 8: Air fry for 10-12 minutes or until the peppers are tender and the cheese is bubbly and golden.
  9. Step 9: Remove from the air fryer and let cool slightly.
  10. Step 10: Garnish with fresh cilantro and serve with sour cream if desired.
