Ingredients
- 4 large bell peppers, halved and seeds removed
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Sour cream for serving (optional)
Instructions
- Step 1: Preheat the air fryer to 360°F (182°C).
- Step 2: Heat olive oil in a skillet over medium heat and add the chopped onion and garlic, sautéing until the onion is translucent.
- Step 3: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Step 4: Stir in the cumin, chili powder, smoked paprika, salt, and pepper, then cook for another 2 minutes.
- Step 5: Add the cooked rice and black beans to the beef mixture, stirring until well combined.
- Step 6: Stuff each bell pepper half with the beef and rice mixture and top with shredded cheddar cheese.
- Step 7: Place the stuffed bell peppers in the air fryer basket, ensuring they are not overcrowded.
- Step 8: Air fry for 10-12 minutes or until the peppers are tender and the cheese is bubbly and golden.
- Step 9: Remove from the air fryer and let cool slightly.
- Step 10: Garnish with fresh cilantro and serve with sour cream if desired.
