Stuffed Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 4 cups fresh spinach leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Pierce each sweet potato several times with a fork and place them on a baking sheet.
  3. Step 3: Bake the sweet potatoes in the preheated oven for about 45 minutes, or until tender.
  4. Step 4: While the sweet potatoes are baking, heat olive oil in a skillet over medium heat.
  5. Step 5: Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent.
  6. Step 6: Stir in the sliced mushrooms and cook until they are golden brown and the moisture has evaporated.
  7. Step 7: Add the spinach leaves to the skillet and cook until wilted.
  8. Step 8: Season the mushroom and spinach mixture with dried thyme, salt, and pepper, then remove from heat.
  9. Step 9: Once the sweet potatoes are done, let them cool slightly, then cut them in half lengthwise and gently scoop out some of the flesh, creating a small well.
  10. Step 10: Mix the scooped-out sweet potato flesh with the mushroom and spinach mixture, then fill each sweet potato half with the mixture.
  11. Step 11: Sprinkle crumbled feta cheese over the stuffed sweet potatoes and return them to the oven for an additional 10 minutes, or until the cheese is slightly melted.
  12. Step 12: Drizzle fresh lemon juice over the top before serving.
