Ingredients
- 4 large bell peppers, any color
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup canned corn, drained
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- Step 3: In a large oven-safe skillet, heat the olive oil over medium heat.
- Step 4: Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Step 5: Add the diced onion and minced garlic to the skillet and cook until the onion is soft and translucent.
- Step 6: Stir in the taco seasoning, cooked rice, black beans, and corn. Cook for another 2-3 minutes until everything is well combined.
- Step 7: Season the mixture with salt and pepper to taste, then remove the skillet from heat.
- Step 8: Stuff each bell pepper with the beef and rice mixture, pressing down gently to pack it in.
- Step 9: Place the stuffed peppers back into the skillet and sprinkle the tops with shredded cheddar cheese.
- Step 10: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Step 11: Remove from the oven and let cool slightly before garnishing with chopped cilantro, if using, and serving.
