This classic Texas Brisket is perfectly smoked to tender, juicy perfection with a flavorful crust.
Ingredients
- 1 whole beef brisket (5-6 pounds)
- 2 tablespoons kosher salt
- 2 tablespoons black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1/4 cup Worcestershire sauce
- 2 tablespoons brown sugar
- 2 tablespoons olive oil
Instructions
- Step 1: Trim the brisket of excess fat, leaving about 1/4 inch of fat on the top.
- Step 2: In a small bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Step 3: Rub the spice mixture generously over the entire brisket, pressing it into the meat.
- Step 4: In a separate bowl, combine the apple cider vinegar, water, Worcestershire sauce, brown sugar, and olive oil to create a marinade.
- Step 5: Place the brisket in a large dish or resealable bag, pour the marinade over it, and let it marinate in the refrigerator for at least 4 hours, preferably overnight.
- Step 6: Preheat your smoker or grill to 225°F (110°C).
- Step 7: Remove the brisket from the marinade and place it on the smoker or grill, fat side up.
- Step 8: Smoke the brisket for 6-8 hours, or until the internal temperature reaches 195-205°F (90-96°C), adding wood chips as needed.
- Step 9: Let the brisket rest for at least 30 minutes before slicing against the grain.
