Texas Chili

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • 1 tablespoon masa harina (optional, for thickening)

Instructions

  1. Step 1: Heat the vegetable oil in a large pot over medium-high heat.
  2. Step 2: Add the beef cubes and brown them on all sides, then remove from the pot and set aside.
  3. Step 3: In the same pot, add the chopped onion and garlic, cooking until the onion is translucent.
  4. Step 4: Stir in the chili powder, cumin, oregano, paprika, and cayenne pepper, cooking for another minute until fragrant.
  5. Step 5: Return the beef to the pot, then add the diced tomatoes, beef broth, and tomato paste, stirring to combine.
  6. Step 6: Bring the mixture to a boil, then reduce heat to low and cover, simmering for 1.5 to 2 hours until the beef is tender.
  7. Step 7: Season with salt and pepper to taste, and if desired, stir in masa harina to thicken the chili.
  8. Step 8: Serve hot with your choice of toppings such as shredded cheese, sour cream, or chopped onions.
