Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup small pasta (such as ditalini or elbow macaroni)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- Step 1: In a large pot, heat the olive oil over medium heat.
- Step 2: Add the chopped onion and sauté until translucent, about 5 minutes.
- Step 3: Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5-7 minutes until the vegetables are softened.
- Step 4: Add the can of diced tomatoes (with juices) and stir to combine.
- Step 5: Pour in the broth and bring the mixture to a boil.
- Step 6: Once boiling, add the cannellini beans, dried oregano, dried thyme, salt, and pepper.
- Step 7: Reduce heat to a simmer and let cook for about 10 minutes.
- Step 8: Add the pasta to the pot and cook according to package instructions until al dente, usually about 7-10 minutes.
- Step 9: Once the pasta is cooked, taste and adjust seasoning if necessary.
- Step 10: Serve hot, garnished with fresh parsley and grated Parmesan cheese.
