Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1 tablespoon chopped fresh basil
Instructions
- Step 1: Season the chicken breasts with salt and pepper on both sides.
- Step 2: Heat olive oil in a large skillet over medium-high heat.
- Step 3: Add the chicken breasts to the skillet and cook for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Step 4: In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Sauté for about 1 minute until the garlic is fragrant.
- Step 5: Pour in the chicken broth and use a wooden spoon to scrape up any brown bits from the bottom of the pan.
- Step 6: Stir in the heavy cream, Parmesan cheese, and Italian seasoning, and bring the mixture to a simmer.
- Step 7: Add the fresh spinach to the skillet, stirring until it wilts into the sauce.
- Step 8: Return the chicken breasts to the skillet, spooning the sauce over the top, and let them simmer for an additional 2-3 minutes to absorb the flavors.
- Step 9: Garnish the dish with chopped fresh basil before serving.
