A quick and flavorful vegetable fried rice perfect for a weeknight dinner or as a delicious side dish.

Vegetable Fried Rice

Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
  3. Step 3: Stir in the frozen mixed vegetables and cook until they are heated through and tender.
  4. Step 4: Push the vegetables to one side of the skillet and pour the beaten eggs into the cleared space; scramble the eggs until they are fully cooked, then mix them with the vegetables.
  5. Step 5: Add the cooked rice to the skillet, breaking up any clumps, and stir everything together.
  6. Step 6: Pour in the soy sauce, oyster sauce, and sesame oil, stirring to evenly coat the rice and vegetables.
  7. Step 7: Continue to cook for a few more minutes, allowing the flavors to meld and the rice to slightly crisp.
  8. Step 8: Season with salt and pepper to taste, then garnish with sliced green onions before serving.
