This Vegetable Lasagna with Spinach and Ricotta is a hearty, cheesy, and deliciously satisfying dish perfect for a comforting family meal.
Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup mushrooms, sliced
- 5 cups fresh spinach
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups ricotta cheese
- 1 egg
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cook the lasagna noodles according to package instructions, then drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
- Step 4: Add zucchini, bell pepper, and mushrooms to the skillet, cooking until tender. Stir in spinach, oregano, basil, salt, and pepper, cooking until spinach is wilted. Remove from heat.
- Step 5: In a bowl, combine ricotta cheese and egg until smooth and well blended.
- Step 6: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
- Step 7: Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetable mixture, a third of the mozzarella, and another layer of sauce.
- Step 8: Repeat the layers, ending with noodles topped with remaining sauce and mozzarella cheese. Sprinkle Parmesan cheese on top.
- Step 9: Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes, until cheese is bubbly and golden.
- Step 10: Allow the lasagna to cool for a few minutes before slicing and serving.
