Vegetarian Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (28 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Step 1: Heat olive oil in a large pot over medium heat.
  2. Step 2: Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
  3. Step 3: Stir in the red bell pepper, green bell pepper, carrots, and zucchini, and cook for another 5 minutes until the vegetables are slightly softened.
  4. Step 4: Add the black beans, kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper.
  5. Step 5: Pour in the vegetable broth and bring the mixture to a boil.
  6. Step 6: Reduce the heat to low and let the chili simmer for 30 minutes, stirring occasionally.
  7. Step 7: Taste and adjust seasoning if necessary.
  8. Step 8: Stir in the chopped cilantro just before serving.
