This hearty vegetarian chili is packed with colorful vegetables and bold spices, perfect for a cozy meal.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (28 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions
- Step 1: Heat olive oil in a large pot over medium heat.
- Step 2: Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
- Step 3: Stir in the red bell pepper, green bell pepper, carrots, and zucchini, and cook for another 5 minutes until the vegetables are slightly softened.
- Step 4: Add the black beans, kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper.
- Step 5: Pour in the vegetable broth and bring the mixture to a boil.
- Step 6: Reduce the heat to low and let the chili simmer for 30 minutes, stirring occasionally.
- Step 7: Taste and adjust seasoning if necessary.
- Step 8: Stir in the chopped cilantro just before serving.
