These Vegetarian Stuffed Bell Peppers are loaded with a savory mix of rice, beans, and veggies, topped with melted cheese for a satisfying and colorful meal.
Ingredients
- 4 large bell peppers (any color)
- 1 cup cooked brown rice
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cut the tops off the bell peppers and remove the seeds and membranes.
- Step 3: In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3 minutes.
- Step 4: Add the zucchini to the skillet and cook for another 3-4 minutes until tender.
- Step 5: Stir in the cooked rice, black beans, corn, cumin, chili powder, salt, and pepper, mixing well.
- Step 6: Remove the skillet from heat and stir in half of the shredded cheese and the chopped cilantro.
- Step 7: Stuff each bell pepper with the rice mixture and place them upright in a baking dish.
- Step 8: Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Step 9: Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Step 10: Serve hot with lime wedges on the side.
