Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon pink salt
- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Step 1: 1. Start by seasoning the chicken breasts on both sides with pink salt. Let them sit for about 15-20 minutes to absorb the flavor.
- Step 2: 2. In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- Step 3: 3. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest before slicing it into strips.
- Step 4: 4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Step 5: 5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, black pepper, and red pepper flakes (if using). Continue to stir until the cheese is melted and the sauce is smooth.
- Step 6: 6. Add the cooked fettuccine to the sauce and toss to coat. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is achieved.
- Step 7: 7. Add the sliced chicken on top of the pasta and gently toss to combine.
- Step 8: 8. Serve immediately, garnished with chopped parsley and additional Parmesan cheese if desired.
