White Chicken Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 4 cups chicken broth
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Step 1: In a large pot, heat the olive oil over medium heat.
  2. Step 2: Add the diced onion and sauté until soft, about 5 minutes.
  3. Step 3: Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Step 4: Add the diced chicken to the pot and cook until it is no longer pink, about 5-7 minutes.
  5. Step 5: Stir in the white beans, diced green chilies, cumin, oregano, and cayenne pepper (if using).
  6. Step 6: Pour in the chicken broth and bring the mixture to a boil.
  7. Step 7: Reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld.
  8. Step 8: Add the corn and simmer for an additional 5 minutes.
  9. Step 9: Season with salt and pepper to taste.
  10. Step 10: Serve hot, garnished with fresh cilantro and lime wedges.
