Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 4 cups chicken broth
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Step 1: In a large pot, heat the olive oil over medium heat.
- Step 2: Add the diced onion and sauté until soft, about 5 minutes.
- Step 3: Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Step 4: Add the diced chicken to the pot and cook until it is no longer pink, about 5-7 minutes.
- Step 5: Stir in the white beans, diced green chilies, cumin, oregano, and cayenne pepper (if using).
- Step 6: Pour in the chicken broth and bring the mixture to a boil.
- Step 7: Reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld.
- Step 8: Add the corn and simmer for an additional 5 minutes.
- Step 9: Season with salt and pepper to taste.
- Step 10: Serve hot, garnished with fresh cilantro and lime wedges.
