Yassa

Ingredients

  • 4 chicken thighs (or 2 whole chickens, cut into pieces)
  • 4 large onions, thinly sliced
  • 4 cloves of garlic, minced
  • 1/4 cup of Dijon mustard
  • 1/4 cup of lemon juice
  • 1/4 cup of vegetable oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of cayenne pepper (optional)
  • 1 cup of chicken broth or water
  • 2-3 bay leaves
  • 1-2 carrots, sliced (optional)
  • 2-3 green bell peppers, sliced (optional)
  • Rice, for serving

Instructions

  1. Step 1: In a large bowl, combine the Dijon mustard, lemon juice, garlic, salt, black pepper, and cayenne pepper (if using). Mix well.
  2. Step 2: Add the chicken pieces to the marinade, ensuring they're well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Step 3: In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Remove the chicken from the marinade (reserve the marinade) and brown the chicken pieces on both sides. Remove the browned chicken and set aside.
  4. Step 4: In the same skillet, add the sliced onions and cook until they become soft and translucent, about 5-7 minutes.
  5. Step 5: Return the browned chicken to the skillet with the onions. Add the reserved marinade, chicken broth or water, bay leaves, and any additional vegetables like carrots and bell peppers.
  6. Step 6: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
  7. Step 7: Taste and adjust seasoning if necessary.
  8. Step 8: Serve the Yassa hot over cooked rice, garnished with additional sliced onions if desired.
