This comforting zucchini casserole features tender zucchini and a cheesy, creamy filling topped with a crunchy buttery cracker crust.
Ingredients
- 4 cups sliced zucchini
- 1 cup chopped onion
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup crushed buttery crackers
- 1/4 cup melted butter
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large pot, bring water to a boil and add the sliced zucchini; cook for about 5 minutes until just tender, then drain and set aside.
- Step 3: In a large bowl, combine the cooked zucchini, chopped onion, shredded cheddar cheese, sour cream, eggs, salt, pepper, and garlic powder, mixing well.
- Step 4: Transfer the mixture into a greased 9x13-inch baking dish.
- Step 5: In a small bowl, mix the crushed buttery crackers with the melted butter until evenly coated.
- Step 6: Sprinkle the cracker mixture evenly over the zucchini mixture in the baking dish.
- Step 7: Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is bubbling.
- Step 8: Allow to cool for a few minutes before serving.
